Mastering Your First Pour-Over

Pour-over coffee is often seen as intimidating. The equipment looks precise, the steps seem technical, and the results feel unforgiving. But at its heart, pour-over brewing is one of the simplest and most rewarding ways to understand coffee. The foundation of a good pour-over starts with fresh coffee. Freshly roasted beans carry aromas and flavors that fade quickly over time. Grinding just before brewing preserves those qualities and gives you a clearer, more expressive cup. A medium grind size—somewhere between table salt and coarse sand—is a good place to begin, offering balance without over-extraction.

Water temperature matters more than many realize. Water that is too hot can extract bitterness, while water that is too cool leaves flavors muted. A range between 92–96°C allows the coffee to open up naturally. When brewing, the first pour—known as the bloom—is essential. This small pour wets the coffee grounds and allows trapped gases to escape, setting the stage for even extraction.

As you continue pouring, focus on consistency rather than speed. Gentle, circular pours help distribute water evenly and avoid channeling. Watch the coffee bed and observe how it reacts. These visual cues are valuable teachers. If the water drains too quickly, the grind may be too coarse. If it stalls, the grind may be too fine. Each brew is feedback, not failure.

What makes pour-over special is the space it creates for experimentation. Small changes—adjusting grind size, water ratio, or pour pattern—can dramatically shift the final flavor.
